What I love so much about Dr. Tae Yun Kim‘s wisdom concerning food and eating, is that she is all for a healthy and well balanced diet.   She doesn’t promote cutting out entire food groups, or banishing this or that from her table.  

Dr. Tae Yun Kim grew up very poor, and often had to starve.  To her, just having a small bowl of rice was a very special treat, and so she really appreciates and treasures food.

Even sweets are ok every now and then.  It just depends on what you choose, and how you prepare them!  Obviously, if you go to the next Doughnut store around the corner, and eat a couple greasy, icing covered doughnuts every day is no good.

But what if you prepare some beautiful desserts, with healthy ingredients?  Instead of sugar you could use honey, or maple syrup, or even monk fruit.  The key is, everything in moderation and balance.

Cinnamon rolls with icing??  Yes!  The rolls in the picture were made according to Dr. Tae Yun Kim‘s recommendations; using mostly almond flour, chestnut flour, some potato flour and, to keep things together, psyllium husks, to make a nice and pliable yeast dough.  Instead of sugar, I used monk fruit powder in the filling, and the icing?  Just a small amount of organic cream cheese mixed with maple syrup to taste, and cinnamon. 

Dr. Tae Yun Kim also encourages eating fresh fruit as part of a healthy diet, and sometimes they come in handy in desserts.  See what she means?
