Dr. Tae Yun Kim has always emphasized the importance of organic, healthy foods in order to nourish our bodies, minds, and spirits.  If your body is not healthy, how can you focus on anything else?

Dr. Tae Yun Kim wants to make sure she knows what she eats.  It’s a good thing she enjoys gardening and grows her vegetables and fruits. “I eat what my body needs, I don’t eat to entertain my tongue,” she says.  Of course, Dr. Tae Yun Kim is a most outstanding cook.  She makes any meal a gourmet experience, even if it’s simple and plain tomato sauce or soup.

You don’t really need a recipe for this.  It’s best you peel the tomatoes before you make the sauce, and here is a simple trick:  Boil water, submerge the tomatoes for about 30 seconds, drain and peel – the skin will slide right off!

While the water is coming to a boil, cut and dice yellow onion.  Crush about half a cup of garlic per yellow onion.  Start to saute this until very light brown, then add the peeled and chopped tomatoes; and some finely chopped jalapeno peppers, and fresh oregano and basil.  Add a little salt and cook until thick and the taste makes you want to eat the whole pot!

You could add a bit of red wine, but it’s perfectly delicious without.  You can eat this as is, put through blender, have as soup or spaghetti sauce or pizza sauce or even make cioppino with it.
